If you can, get your hands on some Yamazaki. Probably the best affordable 12 year I’ve ever had. Saw some at total wine four or so years ago for $30 and bought a fizith on a whim . Went back to get more and apparently they only had what they had because of some shipping fluke. Cheapest I can find it now is $150/fifth, but in Japan it’s still around $30-40. I like Ninkasi, but the Yamazaki is much less peaty.

Nice! I got hooked on their stuff after checking out their distillery on a whim during one of my first trips to Japan. I didn’t understand most of the tour, but the (shockingly
) cheap tasting room sure helped. In any case, their Coffey Malt has been one of my mainstays since then.
Also, if you do gin, I’d highly recommend giving theirs a shot if you can find it. They use the same (Coffey) stills and it’s a really interesting take on that spirit. The usual juniper berry taste takes a back seat to a huge amount of floral and citrus notes (like enough to easily forego the lime in a G&T) with a hint of pepper and an entertainingly long (45-60 sec) aftertaste.
